The Comforting Vegan : Chillin' Vegan Cherry Sherbet

Chillin’ Vegan Cherry Sherbet

-4 cups Fresh Or Frozen Cherries, Pitted -1 cup Sugar, or to taste  -1 1/2 cups full fat coconut milk, canned -1/2 Tablespoon Vanilla extract -1/2 cup organic Limeade

Prep your cherries (if using fresh). You are going to want to clean and pit the cherries. Set aside until needed. 

*TIP*

When pitting your cherries, don’t buy those fancy uni-tasker gadgets. I adapted a technique from my grandmother that works great. Take a large paper clip and pop it into the cherry (where stem was located) and circle around pit, pull up, and your pit should be sitting on the paper clip when you pull it out. I KNOW! Its crazy but it works great and we all have a paper clip or two laying around.  

Next, Add your prepped cherries to a saucepan with sugar and limeade. 

Bring to a slow boil and cook until cherries are soft and the liquid is syrupy. Remove the pan from the heat and cool the cherries to room temperature before using.


When the cherries have cooled, add cherries and juice to a blender or food processor. 


Blend until smooth, if you’d like a little pulp, don’t make it too thin. 


Add coconut milk, vanilla extract, and blend to combine.



Add liquid sherbet in a ice cream machine. 

Churn for 25 to 35 minutes or until it is a soft serve consistency. 


Once to the consistency, transfer to an airtight freezer container and freeze overnight before serving.

Scoop the sherbet into pretty glass or bowls and serve. Also a good treat served with wine over top, just for the adults. Its a great easy party dessert. Enjoy!
