Summer ingredients are indeed plentiful and we always seem to have leftover fruits we won’t be able to use in time. They can get soft or mushy and we think that’s the last of them, but you can turn those left behind fruits into a delish dessert you could serve at any fancy dinner party. This recipe takes those ripened fruits and adds them to a classic dessert dish perfect for the summertime. With its sweet and savory crumble and the juicy filling, you will wish your fruit would ripen sooner so you can make this recipe ASAP. Serve it hot out of the oven with vegan ice and/or whipped cream or cool and plain, there are no wrong ways to eat this crumble. Just remember to leave some for your family or guest…its only fair. Summery Vegan Peach & Blueberry Crumble
Ingredients
-4 cups fresh or frozen peaches, peeled, pitted and cut into wedges 1/2-inch thick slices -1/3 cup granulated sugar & 1 Tablespoon for baking -2 Tablespoons Agave or your favorite syrup -2 teaspoons cornstarch -2 Tablespoon lemon juice -1 teaspoon lemon zest -2 Tablespoon orange juice -1/8 teaspoon salt -1 cup blueberries
For the Crumble
-1/2 cup all-purpose flour -1/4 cup sugar -1/4 cup old fashion oatmeal -1/4 cup light brown sugar -1/4 cup walnuts, chopped, any nut can be used or leave it out if allergy -1/8 teaspoon ground cinnamon -Pinch nutmeg -1/4 teaspoon salt -1 teaspoons vanilla extract
-6 Tablespoons vegan butter or shortening, at room temperature
Directions
Heat oven to 375 Degrees
Filling
In a large bowl, add all your ingredients except blueberries, 1 Tbsp sugar, and cornstarch. Toss this mixture with the juice mixture that is in the bowl to coat all the peaches.

Once the peaches are mixed, gently fold in the blueberries. Lastly add in the cornstarch and toss to dissolve the cornstarch in the mixture.

Once everything has been combined transfer the fruit mixture to a 2-quart baking dish.

Crumble
In a medium bowl or food process, add all your ingredients. Blend it together until a crumbly mass forms.

Assemble & Baking Take your processed crumble and dump it on top of the waiting peach mixture. Break up any large pieces and even spread out. Sprinkle the remaining tablespoon of sugar evenly over the top of the crumble. This will give the crumble and nice crunch and flavor.

Bake until the crumble is golden brown and the fruit filling is bubbling around the edges, about 35 to 45 minutes. Once it is done, remove from the oven and allow to cool on a wire rack for at least 15 minutes before serving.
